It doesn't matter whether or not you want to gain or lose weight, tracking your calories is a must!
So what is a 'calorie'? A calorie is simply the amount of energy food provides your body. Foods can be categorized as either nutrient-dense, or calorie-dense. Nutrient dense foods are your whole grains, certain meats, fruits and vegetables. Calorie dense foods, on the other hand, consist of that pecan pie cheesecake your mom made for Thanksgiving, or the cheeseburger and extra-large French fry from McDonald's. (It's much easier to gain weight by eating high calorie foods. No one ever got fat from eating carrots...right?)
The idea is easy--if you want to lose weight, then you need to burn more calories than you consume in a day. If you want to gain weight, then visa versa.
